Baked Sweet Potato

Hmm, I'm salivating…! I just started thinking about the baked sweet potato that I'll be eating later on, once I've done today's exercise bike session. sweet potatoes have a high nutritional value, and I also happen to love their taste!

Raw sweet potatoes

I selected one of those, scrubbed it, and baked it for 20 minutes in my super-duper Panasonic 3-way oven (microwave, grill and convector oven combined). It has a baked potato programme which works equally well for sweet potatoes. Somehow, the oven works out how big the (sweet) potato is and sets the baking programme automatically – how convenient is that!

As long as I don't put several different-sized or stupidly-big (sweet) potatoes in the oven at the same time, it seems to get it/them just right. In 17-25 minutes it can bake a (sweet) potato to pretty much the same quality as would take 75-90 minutes in a conventional oven. The skins come out nicely cooked (which is good because I eat them too), and the (sweet) potatoes cook properly through to their centres.

While the oven is doing its work, I have just enough time to knock up a salad or steam some vegetables.

Baked sweet potato

I grind some black pepper on the flesh of the sweet potato, and sprinkle it with a dash of good quality soy sauce (tamari) and extra virgin olive oil – lovely!

Since I bought that oven, I have baked (sweet) potatoes at least 3 times a week.
